1 tablespoon diced red onion

1 tablespoon minced garlic

¾ pound Chihuahuan Chorizo

1 teaspoon dried oregano leaves

1 cup heavy cream

2 eggs

3 cups cubed Sourdough Onion Flatbread

1 cup grated Parmesan or Asiago cheese

Kosher salt to taste

Freshly ground pepper to taste
